A prominent fixture in the heart of Wanchai for more than 12 years now has been Coyote Bar & Grill. With a large open frontage onto busy Lockhart Road- and with the distinctive bright pink exterior facade, and a large neon sign cantilevered out above the roadway- it is impossible to miss Coyote. The casual style restaurant and bar serves an authentic menu of Mexican dishes, with their mesquite grill a specialty. Coyote is also renowned for being the first true margarita bar in Hong Kong- and continues to lay claim as “the best”– serving a selection of over 70 varieties of margaritas, plus a large range of tequilas and mezcal. The bar exudes a friendly “party” atmosphere at night, and crowds spill over onto the outside pavement into the late hours.

The interior design of Coyote cues from the Mexican “adobe” style- with yellow, sand-coloured washed walls and exposed log beams evoking the feel of a desert structure. Imported sandstone from the Mojave Desert is also utilised, and walls are decorated with authentic handicrafts made by North American Indians from Oaxaca, Mexico. Several signature “coyotes” feature- each carved by chainsaw in Santa Fe from solid tree trunks. Retro-style neon signs and multi-colored light fittings hanging from the ceiling, add visual highlights to the large open space. And large cacti plants complete the desert theme.
The voluminous space features the main curved bar in the centre of the ground level area, with a rear staircase leading to a mezzanine dining section. Folding timber framed glass doors open back to provide street front seating and walk-in access from the pavement. The curved, “oval” shaped bar dominates – with a distinctive copper sheaved counter top, and lined with high timber stools upholstered from cow-hide and leather.

As the premier margarita bar in Hong Kong, the bar menu at Coyote showcases over 70 varieties of margaritas. The selections are broken down into categories such as over 30 varieties of “Margaritas Especiales”– frozen or on the rocks (HK65 per glass); “Frozen Fruit Margaritas” with 18 varieties; and further categories- “Coyote Especial Ultimas”; “Supremas D’Oro” (HK$72 per glass) and “Las Margaritas Ultimas” (HK$98 – 158 per glass)- made from premium tequilas such as Cuervo Gold; Patron Silver & Reposado & Anejo; and Centenario. Other “signature” drinks at Coyote include their “Fishbowls” – six varieties of frozen fruit margaritas served in a 1.5 litre “fishbowl” – suggested for sharing amongst three or four friends. A full range of other cocktails, beers and wines are also available, plus “Flaming Specials” at the bar, sangria, and the “Tojitos”– mojito fruit based cocktails- spiced up with a dash of Tabasco pepper sauce.

The food menu at Coyote features all the most popular dishes associated with Mexican cuisine. The specialty of the kitchen is their mesquite grill that provides the distinctive smoked flavours to the char grilled steaks, burgers, fish and poultry. The signature dish at Coyote is the Smoked Baby Back Ribs– a huge slab of prime USA pork ribs. Other dishes from the mesquite grill include Cajun Beef Tenderloin with Goat Cheese; Grilled Mahi-Mahi Fillet; House Smoked Salmon Fillet; and Coyote Barbecue Burger. The menu also features large selections of Tacos; Big Burritos; Enchiladas; Chimichangas; and Fajitas. Extensive selections of bar snacks are available- Nachos; Cowboy Skewers; Mexi-Cali Crab Cake; Quesadilla; and Combo Platters. A feature in the mezzanine dining room is the “Wall of Flame” -customers can choose from over 60 varieties of hot-sauces imported from Mexico and the USA.
Coyote regularly feature special menu promotions and party events. Currently ( February- April 2012) Coyote is serving up “Sizzling Hot Fajitas”– with a choice of a Yogurt marinated USA chicken breast (HK$160), Seared scallops (HK$185), Australian Rosemary baby lamb loin (HK$195) or Prawns wrapped in prosciutto (HK$185) . The fajitas are all served on a sizzling hot skillet adorned with grilled onions, bell peppers and warm tortilla bread.
Also, during the promotional period, Coyote will be holding an additional event to celebrate on Thursday, March 8, 2012 from 9pm onwards. The Carnaval de Mascaras will provide the ultimate Brazilian experience, from percussionists, dancers, DJ’s, fantasia and more. The cover charge is HK$100 which includes two free drinks. Guests wearing a mask or costume enjoy free entry, with a special prize for the best mask or costume.
