Clifford is a spectacularly elegant dining venue within the acclaimed The Fullerton Bay Hotel Singapore– a luxurious, modern boutique hotel on the Marina Bay waterfront of central Singapore. The refined luxury of Clifford is enhanced by the dramatic views through the 10 metre high glass wall that overlooks the waters of the Marina Bay and the adjacent Singapore central business district. Conceived as a modern, chic brasserie, Clifford delivers an exceptional dining experience in a setting that exudes contemporary luxury, whilst evoking the colonial heritage of its historic waterfront location.
The restaurant kitchen serves a modern French bistro style cuisine with an emphasis on fresh seasonal produce and natural flavours. Open daily from early morning breakfast, Clifford serves from three a la carte menus, for breakfast, lunch and dinner. An attractive business lunch offer entices with set prices for two or three course menus.
The Fullerton Bay Hotel and Lantern are part of The Fullerton Heritage – a collection of outstanding dining and hospitality venues situated along the city-side of the Marina Bay waterfront- comprising The Fullerton Hotel Singapore, One Fullerton, Customs House, Clifford Pier and Fullerton Waterboat House.

Clifford occupies an impressive space on the lobby level of the hotel- extending the full length of the building and facing out over Marina Bay. The moment of arrival is quite stunning- entering through the discrete doorway the soaring 10 metre high ceilings and full glass wall create a sense of spaciousness and grand scale. The interior design is the creation of renowned Hong Kong designer Andre Fu, who also created the concepts and designs for the other dining venues within The Fullerton Bay Hotel.
The design of the Clifford interior draws on the colonial heritage of Singapore combining vintage furniture and architectural elements such as 18th century French timber panelling and full height circular columns, with modern refinements, to create a memorable room of exemplary elegance and sophistication.
The palette is a soothing blend of warm grey, dark brown, dark aubergine and burnt orange highlights. Oak parquet flooring contrasts with the ivory color of the French timber panelling. Clifford encompasses a variety of spaces that flow seamlessly along the length of the room- with a private dining room at one end opening off the main dining section, and further separate semi-private salons towards the Marina Bay end of the room. By day the space is suffused with natural light and the waterfront views of the bay, and the evenings present the warm glow of the city lights reflecting off the shimmering waters of Marina Bay.

The culinary team at Clifford have assembled a series of a la carte menus that feature modern interpretations of classic French bistro style dishes. The variety of dishes range from “robust” comfort style to degustation dishes, featuring contemporary flavours that cater to all palettes. Notable dishes include the Lobster and Scallop Carpacciowith Lime Black Truffle Dressing and Fragrant Shiso; Plateau Royale– Market Oysters, Poached Prawns, Mussels & Whole Boston Lobster with Mignonette and Dips; Signature Duck Confitwith Truffle Potato Mousseline, Black Garlic Sautéed Broad Beans, Field Greens; and Crisp Suckling Pig with Bay Leaf Bacon Roasted Fig, Parsnip Puree and Truffle Jus.
Desserts feature gourmet delicasies such as Crisp Chocolate Pillows– Chocolate filled Crisp Pate De Brick, Marinated Red Fruits Tartare, Coconut Ice Cream; and Signature Chocolate Foudue (For Two)– with Fresh Strawberries and Honey Pineapples, Marshmallows, Almond Tuiles, Caramel Fudge.
The wine selection at Clifford runs to over 800 bottles- elegantly showcased in a timber and glass “wine library” at the entrance of the restaurant. Wines are selected from the preeminent wine districts of the world specifically to compliment the cuisine served at Clifford.
