Establishing a working craft brewery on the top floor of an office tower in Singapore’s new financial district was the inspirational challenge undertaken by the team behind LEVEL 33. Since the opening in November 2010, their vision has been vindicated by the many accolades, and the continued popularity enjoyed by LEVEL 33. The restaurant and bar at LEVEL 33 offer a discerning, upmarket beer drinking community with an opportunity to appreciate premium quality , hand crafted beers, in a sophisticated yet casual space high above the Marina Bay precinct. Reportedly the world’s highest operating craft brewery, the combination of the freshly brewed beers and innovative cuisine, together with spectacular views over the Singapore skyline, make for a memorable dining and drinking experience.
The central bar with two functioning copper kettles
At the heart of the craft brewing operation are the two large copper kettles, prominently displayed in the centre of the space, where the brewing process is carried out in full view of the patrons. Entering LEVEL 33 from the dedicated express elevator, the entrance passageway is lined on one side with a row of large stainless steel storage tanks- highlighting the functionality of the space. At the end of the passage the main dining and drinking spaces unfold, with a large , bright and airy space enclosed by floor to ceiling glass walls on all three sides. The central bar area divides the space – with slightly raised dining sections – the Ploughmans Dining ( named after the “Ploughmans table”) to one side, and the Main Dining zone on the south side of the bar. At the far end of the north side are the private dining rooms. And surrounding the interior zone is an open air terrace, with both lounge seating and high tables and chairs that provide panoramic views of the city skyline and Marina Bay areas. The contemporary design of the interior utilises a palette of warm earth tones and natural materials – rich timber flooring, wall panelling and suspended ceilings in the dining areas; and a concrete floor and blackened “industrial” style ceiling in the bar section. During daylight hours, the soaring full height glass bathes the interiors with natural light, and in the evenings the lights of the adjacent city skyline evoke a more serene, sensual atmosphere.

The “Baron Philippe De Rothschild” Private Dining Room
Located in the northern corner of LEVEL 33, the Baron Philippe de Rothschild Private Rooms are two adjoining intimate dining rooms- each seating 10 guests, or 20 when opened into one space. The rooms are lined with displays of Jeroboams of vintage Mouton Rothschild Bourdeaux wines- eliciting an essence of refined luxury and style.
Large stainless steel tanks line the entrance passage– manufactured in Germany by specialist brewing equipment company SALM & Co Gmbh
The brewing operation takes centre stage at LEVEL 33, and the glistening high technology brewing equipment on display throughout the space provide the quintessential form and function to the restaurant and bar. The beers brewed at LEVEL 33 are crafted on the European heritage of classic beer styles, and at present four distinct brews are produced.
33.1 BLOND LAGER– based on original recipes from 19th Century Vienna; 33.2 PALE ALE– a light bodied classic ale with origins from 17th Century recipes; 33.3 STOUT– crafted in the tradition of the original Irish stouts; and 33.4 HOUSE PORTER– an English beer style that combines the 33.3 STOUT and 33.2 PALE ALE to create a strong porter- with combinations of malt and hoppy aromas.
In addition to the freshly crafted beers, LEVEL 33 , through a partnership with world famous Bordeaux vintner Baron Philippe de Rothschild, offer a selection of exceptional wines from the Rothschild labels. The Champagne Barons de Rothschild, Brut is available by the glass. Other wines are sourced from a selection of both New World and Old World boutique and artisan wineries.
The Beverage Menu also includes a selection of classic cocktails- Martini; Margarita, Mojito; Caiparinha; Caiprioska; champagne cocktail; and Signature Gin & Tonic.
Signature brew- 33.1 BLOND LAGER– Crafted from the original 1841 Vienna Blond lager, a refreshing beer that pours to a smooth sunshine gold hue, full bodied with a slight hint of fruit.

The dining experience at LEVEL 33 has been created by Executive Chef James “Jimi” Tegerdine– with the extensive AL A CARTE menu based around contemporary interpretations of classic European cuisines.
