The resurgence of the “cocktail culture ” in recent years has spawned the establishment of many new “designer” cocktail bars in the major cities of the world- with the significant trends emanating in particular from Tokyo, London, and New York. The luxury hotels have also contributed an important role in the renaissance of the cocktail culture- and much design and creative effort has been expended in re-creating the classic cocktail bar experience travelers have come to expect from the leading hotels of the world. The MARTINI BAR at the Grand Hyatt Singapore is an excellent example of the “classic” hotel cocktail bar, and successfully executes on the promise of delivering the true cocktail experience. The specialty at the MARTINI BAR is their extensive selection of martinis- from the classic varieties to the more exotic- all enjoyed in an environment of understated elegance and comfort.
The MARTINI BAR is located in a space adjoining the MEZZA 9 restaurant, on the mezzanine level at the Grand Hyatt Singapore. The long narrow space is bathed in light during the day – with a domed glass enclosed bar overlooking the busy Singapore street life, and a lounge area with comfortable sofa seating on a raised level parallel to the bar. The bar design is functional rather than elaborate, with a long timber bar counter, curved back, timber bar seats; and at night, a soft suffusion of light creates an atmosphere of warmth and muted luxury. Intricately patterned metal latticework panels cover all the glass windows- providing filtered views of the outside world, and a sense of enclosure and privacy within the bar space.
True to its name- the MARTINI BAR offers guests a selection of over 30 varieties of martinis- probably one of the largest available in Singapore. The head bartender at the MARTINI BAR has been serving cocktails there for over 12 years and his skills in cocktail preparation have been long appreciated by regular customers. The alluring attraction of the martini is that it is a cocktail with almost endless possibilities for concocting subtle combinations of liquors and flavours- from the classic versions of the early 20th century, to the contemporary creations that capture the textures, colors and flavours of tropical fruits. Some of the more popular martini creations at MARTINI BAR are featured below.
Passion Fruit Martini– Tanqueray Gin, passion fruit, lemon juice
Lychee Martini– Imperia- Russian Standard Vodka, lychee liqueur, lychee syrup, fresh lychees
Pink Grapefruit Martini– Belvedere Pink Grapefruit Vodka, Cointreau, sugar syrup, freshly squeezed Grapefruit juice

The MARTINI BAR , in addition to the headline attraction of its martini collection, also serve many other cocktails, premium spirits, wines and champagnes, beer and non-alcoholic drinks. There is a menu of bar snacks- with both Western and Asian dishes such as Oysters on ice; Thai chicken wings; California rolls; Blue Swimmer crab cakes; Crispy spring rolls; Selected farm cheeses & walnut bread; Sashimi & Sushi platters.
