ZUMA restaurants world-wide feature a contemporary, sophisticated update to the traditional Japanese “izakaya” style of casual eating and drinking. The concept for ZUMA originated in London in 2002, combining both the culinary and aesthetic design traditions of Japan, interpreted into a modern, stylish dining and drinking experience. ZUMA presents high quality Japanese cuisine, served from open show kitchens, including the feature sushi and robata counters. The restaurant spaces are large, with the distinctive designs in each location created by leading Japanese design firms, drawing on both contemporary Japanese, and Western design influences, and with extensive use of natural building materials such as granite stone, and salvaged timbers. Following the success of the original London restaurant, the ZUMA team of Chef Rainer Becker and partner Arjun Waney, opened a new branch in Hong Kong in 2007; and subsequently in Istanbul and Dubai in 2008; followed by Miami in 2010; and in December 2011, Bangkok, Thailand.
In addition to the superb Japanese cuisine, ZUMA are also renowned for their sumptuous creative cocktails- each ZUMA location concocting signature cocktails utilising the fresh tropical fruits, spices and flavour influences of the local culinary heritage to create distinctive and alluring drinks. Recently, in recognition of the signature cocktails from each ZUMA locality, a new cocktail list has been created- “ZUMA Around the World Top Cocktails”– showcasing the most popular signature cocktail of each of the six ZUMA restaurants world-wide. The six “Top Cocktails” are featured below- and can now be enjoyed at the both ZUMA Bar & Lounge in Hong Kong, and also at ZUMA Bangkok.

Lychee Rose Martini- Miami, USA : rose infused vodka and Bombay Sapphire gin shaken with lychee and lemon juice
Zumanuka – Bangkok, Thailand: basil, pineapple and pressed apple mixed with 42 Below Manuka Honey vodka and finished with fresh lemon and lime
Japanese Whisky Sour- Dubai: smoked infused Nikka from the Barrel whisky, yuzu juice, egg white and a dash of plum bitters
Rubabu- London, UK : rhubarb infused sake shaken with 42 Below vodka and fresh passion fruit, served as a martini
Raspberry & Passionfruit Martini – Hong Kong : bison grass vodka shaken with raspberries and passion fruit with a hint of fresh apple juice
South East Asian Cooler- Istanbul, Turkey : bison grass vodka mixed with fresh passion fruit, mint, cinnamon and pressed apple juice
