A refreshing addition to Singapore’s plethora of Chinese seafood restaurants, Majestic Bay Seafood Restaurant offers an appealing blend of traditional Chinese seafood dishes, complemented with modern interpretations and innovative dishes. Located within the impressive Gardens by the Bay development on Singapore’s reclaimed waterfront, the restaurant has been designed to sit comfortably within the context of its dramatic architectural environs. Majestic Bay represents the most recent addition to the highly regarded Chinese restaurants (Majestic and JING) currently owned and operated by renowned Singaporean chef Yong Bing Ngen, in collaboration with the Unlisted Collection group of local hotelier and restaurateur Loh Lik Peng. Opened in late 2012, Majestic Bay entices diners with its wonderful Chinese seafood cuisine, served at approachable prices, in a delightful setting that exudes a relaxed and uncluttered contemporary chic. In keeping with its Chinese dining heritage, the restaurant welcomes groups of families and friends to share and enjoy the superb fresh seafood ( and dim sum)- whilst immersed in the pleasant garden and waterfront setting of the unique Flower Dome.
Majestic Bay opens daily for lunch and dinner- offering selections from a la carte , Dim Sum and Set Menus. The restaurant is easily accessible through the transport facilities servicing the Gardens by The Bay. Bookings for large tables, and weekends are recommended.
CUISINE AT MAJESTIC BAY
The extensive a la carte menu showcases the most popular Chinese seafood dishes of South East Asia, including Chili Crab, Black Pepper Crab, many varieties of Steamed Fish, plus a selection of non-seafood dishes including Crispy Duck, Jiang-nan style; and Wok-fried, Pork Ribs, with espresso sauce. Signature dishes of Chef Yong include the “Kopi Crab” – an innovative dish featuring either a Sri Lankan Mud Crab, or US Dungeness Crab, cooked in a special home-made sauce blended from three different varieties of coffee beans, and finished with the dramatic flourish of a table-side flambé. Other standout signature dishes include the Baked Assorted Seafood Rice with Chef’s Recipe Sauce, served in two sizes- either for 4-6, or 7-12 persons, and limited to only three portions per dining session. And the steamed river fishes in particular are a favourite with local tastes, headlined by the prized rare Empurau and Temoleh species, famed for the delicate flesh and clean, subtle flavours.
Heading up the culinary team preparing the lunchtime Dim Sum menu is chef Li Shou Tao from Guangzhou. Showcasing the full repertoire of Chef Li, the menu selection of 24 items presents a panoply of classic dim sum, including Steamed Siew Mai (pork) Dumpling; Steamed Vegetarian Dumpling; and Seared Chili Crab Meat Bun. And to finish the meal, enticing dim sum desserts such as Glutinous Rice Dumpling with Fresh Cream Stuffing; and the traditional Steamed Custard Bun with Salted Egg Yolk, round off a sumptuous dining experience.
BEVERAGES
A thoughtfully constructed beverage list complements the fine seafood cuisine, with a broad selection of reasonably priced wines sourced from leading global wineries, including a good range of white varietals that pair harmoniously with the seafood dishes. Full-bodied red wines from Bordeaux, Italy and Australia are also available, plus champagne and sparkling wines, and a choice of house wines by the glass. Other beverages include a concise selection of beers and premium spirits, fruit juices, soft drinks and Chinese teas.
Inside Majestic Bay Seafood Restaurant- at the Flower Dome
Majestic Bay is set within a glass-wrapped corner space of the dramatic Flower Dome structure.
Dining tables are spaciously laid out across the long rectangular floor space. The full height glass wall bathes the interior in natural light during the day- creating a bright and relaxed environment for dining.
In a contemporary variation from the traditional Chinese large round dining tables, smaller tables that face the long banquette extend across the back wall. “Porthole” shaped mirrors decorate the wall- adding an elegant nautical reference to the decor.
A private dining space at the far end of the main room seats up to 14 guests at a single round table. Set behind a series of mirrored doors that can fold back to open the room out into the restaurant proper.
Window front tables provide excellent views across the gardens to the waters of Marina Bay.
Customary with Chinese seafood restaurant convention- a series of glass tanks at the entrance showcase the live fish and crustaceans. Exotic species of river fish- sustainably farmed in Malaysia- are kept in the lower tanks.
