Occupying the rooftop of the luxurious The Fullerton Bay Hotel in Singapore, Lantern enamours guests with its spectacular views across the Marina Bay vicinity. Adjoining a stunning pool and terraced garden, Lantern exudes a casual sophistication, and has become one of Singapore’s most popular destinations for evenings drinks, dining, and private parties since it opened in 2010. A billowing white fabric canopy spans the entire width of the timber decked rooftop section providing shelter from both the tropical sunshine and any rain showers. Projecting out into the bay, the hotel enjoys water frontage on three sides, and with the low-rise elevation, Lantern offers an engaging connection with the Singapore waterfront, plus unhindered panoramic views of the city’s skyline.
Most popular as an open-air, waterfront destination for drinks from early evening until late into the night, the chic Lantern also offers an appetising a la carte menu for both lunch and dinner. With its elegant yet relaxed design aesthetic, guests can comfortably enjoy the gourmet cuisine and consummate cocktails whilst taking in the wonderful views and waterfront ambience.
The lunch menu features selections of fresh salads, wraps and sandwiches, and “deconstructed pizzas”, plus a selection of main dishes such as Angus Grain-fed Sirloin served with Truffle Fries and mixed salad; Broiled Miso Cod with Tobiko mayo and potato salad; and the Creme Fraiche, smoked salmon, spinach ricotta, and brie cheese pizza.
Signature cocktail highlights include the locally inspired Merlion with tequila, young ginger, honey, lime, soda; and Red Lantern made with tequila, watermelon, cucumber, lemon. In addition to the sumptuous signature cocktails, the bar team at Lantern also can serve up polished renditions of classic cocktails such as Manhattan, Negroni, and Old Fashioned, plus several versions of the ever-popular and refreshing Mojito. Other beverages served include a concise cellar selection of vintage wines, plus wines by the glass, premium spirits, beer and soft drinks.
Lantern serves Lunch daily from 12.00 pm to 3.00 pm; and Cocktails from 5.00 pm until closing. Table bookings are recommended in the evenings.
