Avant-garde hotel dining experiences at Philippe Starck-designed The South Beach hotel in Singapore

Singapore’s newest luxury hotel – The South Beach – opened in late 2015 as part of the South Beach mixed-used development that comprises offices, luxury residences, retail and lifestyle spaces – harmoniously integrating historic army sites with two new tower blocks. With architectural design by renowned Foster+Partners, and dramatic interiors created by the legendary Philippe Starck, the design-centric 654 room hotel pushes the boundaries of contemporary hotel experiences. In addition to numerous (over 40) social spaces found across the hotel, The South Beach also offers several bar and restaurant options, with the ADHD (All Day Hotel Dining) restaurant redefining traditional perceptions of hotel dining rooms with its striking avant-garde design and contemporary culinary sensibilities. Under the direction of Executive Chef Martin Bracker, ADHD serves both a sumptuous breakfast buffet, and an all-day a la carte menu of accomplished renditions of international and local dishes.
Design Designed with the ineffable swank that is synonymous with Philippe Starck’s idiosyncratic style, the striking ADHD interior is built on a muted palette of light natural tones, overlaid with expansive deployments of grey marble, stainless steel, blond timbers and camel-coloured leather furnishings, and embellished with vibrant splashes of bright red and orange elements. Within the spacious room, dining spaces include the centrepiece long white marble communal table – replete with Philippe Starck’s iconic Ghost chairs – an adjacent massive freeform timber slab table, while both indoor tables and an open-air terrace offer further seating options.
Cuisine Seasonal a la carte menus comprise diverse selections of both modern European dishes, and interpretations of local Asian cuisines. Artistically plated, signature dishes showcase premium quality fresh produce deftly married with creative culinary techniques. Standout dishes from the current seasonal menu include the Salmon Three Ways – smoked salmon and sour cream roulade, Balik salmon, Asian-cured salmon; Herb Veal Tenderloin – oven-roasted veal tenderloin, port wine jus, butter-tossed vegetables, potato gratin; and the elegantly plated Berry Fields – with red berry and cherry mascarpone dome, Grand Marnier marinated berries, and yoghurt mousse.
ADHD is open daily from 6:30am for the breakfast buffet, with the a la carte menu served all day between midday and 11 pm. A series of seasonal Set Lunch Menus offer excellent value with the 2-course set at S$18++ and 3-course at S$24++.
