Modern tapas dishes accented with fresh seafood and Australian influences at restaurant by Luke Mangan

One of two “SALT” branded restaurants in Singapore created by celebrated Australian chef Luke Mangan, SALT Tapas & Bar opened at the Raffles City complex in 2013. Highly regarded for his modern, Australian-influenced tapas cuisine, Mangan has successfully established SALT restaurants in Surfers Paradise, Tokyo, Jakarta, and Singapore, plus SALT grill restaurants on five P&O cruise ships. The Raffles City branch occupies a prominent, free-standing indoor/outdoor space on the street frontage looking across towards the historic Raffles Hotel, SALT restaurant exudes an understated urban chic, that together with the laid-back and welcoming vibe is emblematic of Australian-style hospitality. Led by local Executive Chef Ronald Li, SALT recently introduced a refreshed tapas menu that adds a focus on fresh local seafood to the contemporary interpretations of tapas-style dishes of Luke Mangan.
Design Entering SALT, guests can take seats at a series of red marble high-tables spanning the open-air deck, or at tables within the main interior dining room. An attractive contemporary decor combines warm timbers, patterned ceramic tiled flooring and rustic raw red bricks that evoke a traditional Spanish tapas bar aesthetic, while the centrepiece L-shaped bar and kitchen counter showcases the culinary team as dishes are prepared in view of guests.
Cuisine The new al la carte menu at SALT combines a respect for traditional Catalan cooking techniques with top-quality fresh ingredients and modern plating to create attractive and flavourful dishes. Seafood features strongly, with the daily selections of fresh fish cooked with a light touch and served with local Asian vegetables. Notable dishes from the new SALT tapas menu include the Taco of Tempura Soft Shell Crab; Grilled Big Head Prawn – whole giant prawns grilled and served on a bed of papaya salad; and BBQ Pork Ribs with mash, pickled onion, sautéed pea, and edamame.
Drinks A thoughtfully curated wine list of Spanish, Australian and other international labels present ideal accompaniments to the flavourful tapas cuisine. And an approachable list of classic and signature cocktails, house sangrias, plus premium spirits and beers offer further refreshment choices. Daily drinks offers include the Thirsty Hour between 11:30am and 7pm, and the nightly After 7 promotions.
SALT Tapas & Bar opens daily from 11:30am, with a bar snack menu served between 2:30pm and 5pm (Monday to Friday) and the a la carte menu from 5pm. A 3-course Set Lunch Menu offers good value at S$26++. Check the SALT Facebook Page for upcoming events and special promotions.
