Acclaimed restaurant and bar Zuma Hong Kong recently launched a unique evolving cocktail system

Acclaimed restaurant and lounge Zuma Hong Kong recently launched in partnership with Ron Zacapa premium rums, a unique ‘evolving cocktail system’ – the Zuma Zacapa Live Solera. A custom designed cocktail installation, the Zuma Zacapa Live Solera system, has been installed in Hong Kong and the eight other Zuma restaurants worldwide – delivering an original cocktail in each restaurant, designed to appeal to local palates and to perfectly complement Zuma’s contemporary Japanese cuisine.
Originally developed by Spanish and Portuguese sherry and port makers, the solera process features a sequence of barrel ageing and fractional blending to create a refined finished product. The unique Zuma Zacapa system incorporates four American oak barrels connected in sequence, with the first three casks individually flavoured with selected culinary ingredients, with the Zacapa rum gradually passing through the barrel system, adding a unique and balanced taste profile to the drink. For Zuma Hong Kong, the rum is inflected with local culinary flavours such as Szechuan and pink peppercorns, fennel seeds and duck fat to create the signature cocktail.
After the Zacapa rum as passed through the Solera system, the finished cocktail is served in a chilled glass with hand-cut ice engraved with a bespoke ice stamper.
The Zuma Zacapa Live Solera launched in Miami on September 26th, October 4th in Zuma London, Hong Kong, Dubai and New York, Zuma Rome and Abu Dhabi followed on October 18th, and finally Zuma Bangkok on October 20th.
