Refurbished restaurant evokes the vibrant spirit of Spanish bodegas and tapas bars

Re-launched after a recent interior refurbishment, Singapore’s FOC PIM PAM – a quirky nod to the Spanish phrase “quick and easy” – promises authentic Spanish tapas dining and drinks experiences. In addition to the revitalised interior, the menus at FOC have also been refreshed with new culinary and beverage highlights. Reimagined interiors now feature a restrained colour palette of black, greys, timbers and metal accents that exude an urban sophistication. Within an open layout, a series of functional zones – including the Tapas Bar, split-level Main Dining Room, Bar and an open-air Terrace – are delineated with partition walls, display shelves and countertops – combining harmoniously to recreate the vibrant spirit of Spanish dining culture.
At the entrance, the Tapas Bar is outfitted with bar counter stools, repurposed wine barrel tables and floor-to-ceiling windows. Separated from the Tapas Bar by fluted glass panels, the main dining space features upholstered banquettes and contemporary metal tables paired with timber seats. In the heart of interior is the Bar which services both the indoor and outdoor terrace spaces. At the curved brass bar counter the bartenders mix signature cocktails, gin & tonics and serve up all the beverages. And for an al fresco experience, there’s the street-side Terrace: a breezy, convivial space for all-day drinks and casual tapas dining.
Diners can expect tapas and dining menus that brim with familiar dishes and house specialities. Premium Spanish Jamon Iberico cuts splashed with olive oil then sided with cheese and salsas highlight the tapas offerings, while canned Spanish cockles and mussels bring the taste of the sea are also available at the retail counter. Popular dishes from the dining menu include Fresh Burrata; Secreto & Mushroom Paella; Half Suckling Pig; and Catch of the Day. To finish, traditional Churros – that famous crunchy pastry dipped in either white or regular chocolate – and Lemon Lemoncello – are perennial favourites.
From the bar, a library of 150 wines gathered from the premier Spanish regions are complemented by the selection of 16 house cocktails, ranging from floral, smooth, rounded to classic – designed to match guests’ moods. But perhaps the highlight of FOC PIM PAM’s liquor offering is its extensive collection of Spanish sherries – carefully selected from boutique producers and famous bodegas to bring the spirit of Spain’s stand-up tapas bars to Singapore.
FOC PIM PAM is open from Mondays to Sundays – serving lunch and dinner, plus late night drinks at the bar.
