Head Chef Oliver Hyde reinterprets Modern Mediterranean cuisine

Serving well-executed Modern Mediterranean cuisine within a spectacular CBD rooftop space, Artemis Grill continues to be a popular destination for stylish dining and entertaining. Located on the 40th-floor rooftop of the CapitaGreen tower, Artemis takes full advantage of its spectacular setting presenting guests with an outdoor garden bar (including a center-piece hundred-year-old olive tree) – and luxurious interior dining spaces encapsulated by floor-to-ceiling windows. Since its inception in 2015, Artemis Grill has committed to serving organic and sustainably sourced produce – specializing in wood-fired meat and seafood dishes.
Last year, Artemis Grill refreshed its culinary direction with the arrival of their new executive chef Oliver Hyde, who had previously honed his culinary skills at acclaimed restaurants including the 3-Michelin-starred The Waterside Inn and Restaurant Gordon Ramsay in London, and more recently in Singapore at Pollen restaurant within Gardens by the Bay. Fondly known as Chef Ollie, the new head chef has added new dishes while continuing to serve popular dishes from previous menus.
Among additions to the Artemis menu are gluten-free options like Bay Scallops and New Zealand Snapper, as well as vegetarian dishes exemplified by Sweet Pea Agnolotti and Summer Jardiniere. For meat enthusiasts, Chef Ollie serves up the O’Connor Tenderloin – cut from prime Australian grass-fed beef; plus sharing dishes such as the 420-day grain-fed Côte de Boeuf, and an indulgent 1.1kg slab of bone-in ribeye. Dessert highlights include Chef Ollie’s Coffee Chocolate Ice Cream – with mascarpone mousse and cookie crumble.
Artemis Grill is located at 138 Market Street, 40th Floor CapitaGreen. Opening hours Mondays to Fridays 11:30 am until late; Saturdays – 6 pm until late.
