Cocktails inspired by the writings of Ernest Hemingway – from the team behind celebrated Hong Kong bar

Following an extraordinary first 2 years in Hong Kong, multi-awarded (ranked #1 on Asia’s 50 Best Bars 2019) cocktail bar The Old Man recently opened their first international offshoot on Keong Saik Road in Singapore. Taking cues from its discreetly located Hong Kong flagship, the literature-inspired bar and lounge takes a step back from the street’s vibrant dining scene, marking its entrance with a solitary pineapple lamp and nondescript doorway. Contrasting with its under-stated exterior, the interior bar takes on a sophisticated, tropical vibe. The hallmark I-shaped bar counter including a chilled brass strip keeping cocktails chilled while guests socialise and engage with the bartenders. Dimly lit bookcases extend down the walls, conveying a literary nod to the works of Hemingway, while also showcasing vintage crystal bottles. Beyond the centrepiece bar, a comfortable lounge space entices relaxed cocktail experiences.
Head Bartender Andrew Yap has joined with the Hong Kong founders to introduce The Old Man’s original cocktail menu to Singapore’s cocktail aficionados. A concise list of nine cocktails takes inspiration from Hemingway’s favourite libations – and deploying advanced culinary techniques – imaginative cocktails and pleasing flavour combinations are created. Exemplifying the innovate assemblage of literary-themed cocktails is The Sun Also Rises – an Asian-inflected Negroni – combining fat-washed applejack, curry leaf gin, sweet vermouth sous-vide pandan leaves and lime kaffir.
With polished cocktails priced at S$17++ from the team behind a ‘World’s Best 50 Bar’ – exceptional hospitality is not a fiction.
The Old Man Singapore is at 55 Keong Saik Road and opens Mondays to Saturdays from 5 p.m. to 12 a.m.
