Sheung Wan bar specialises in classic long drinks – with artisanal ice & Portuguese pesticos snacks

Specialist “long drinks” bar Dai Bing was launched in Hong Kong’s Sheung Wan neighbourhood in February 2019 by the team behind the beloved gin bar Ping Pong Ginoteria 1929 in nearby Sai Ying Pun. Taking a similarly focused approach to the bar concept – Dai Bing (meaning “big ice” in Cantonese) has centred its beverage program around a tight selection of classic long drinks and highballs. Familiar refreshing drinks such as Gin & Tonic, Spritzers and Whisky Highballs are served in tall glasses – elevated with premium ingredients and in-house created artisanal ice blocks.
Located within the refurbished interior of a former example of the district’s ubiquitous dried seafood stores, the compact space has been transformed into an engaging destination for relaxed drinks – complemented with art installations and performance arts events. With high ceilings, black walls, timber parquet flooring, and rattan chairs, the simple yet elegant decor evokes a contemporary interpretation of the neighbourhood’s heritage.
Sharing the spotlight with the classic drinks is the unique installation of the artisanal ice suite – where the crystal clear ice blocks are created in-house. Specialised the freezing machines and filtered water used by ice sculptors allow the Dai Bing team to create custom-made ice blocks with logos, and embedded botanicals.
Dai Bing’s menu of long drinks embraces classic tall drinks that are typically lower in alcohol content that offer both refreshment and sociable engagements. Drinks are created with simplicity – yet displaying intense and complex flavor profiles. Standout examples conceived by Dai Bing’s Japanese mixologist the include the Shiso Gin & Tonic; Matcha Highball – with whisky, matcha, chita, and soda; and Vermouth Spritzer – Punt E Mes, Aperol, lemon juice, and soda. A selection of Portuguese snacks known as “pesticos” ideally complement the beverages – Cheese and Cured Meats; Grilled Squid with Green Olive Sauce; and Portuguese style samosas – Chicken and Coriander Chamuças with Raita.
Dai Bing opens daily from 6:00 pm – conveniently located within a short walk from the Sheung Wan MTR.
