Offshoot of the acclaimed cocktail bar – The Old Man – expands on Hemingway-themed concept

After a spectacular debut on Hong Kong’s competitive cocktail bar scene in mid-2017, The Old Man has been rapidly elevated to the pinnacle of bars in Asia – reaching #5 on Asia 50 Best Bars in 2018 and then to #1 in 2019. On the back of this success, the team behind The Old Man have expanded their regional footprint with the opening of a Singapore-based The Old Man – and in April this year launched in Hong Kong a further interpretation of their Hemingway-themed bar concept – The Sea by The Old Man.
Located in a Sheung Wan neighborhood, The Sea adopts a nautical theme that takes its design inspiration from Ernest Hemingway’s beloved boat. Within the compact space that seats around 35 guests, the nautical influence is expressed in the polished timber flooring, dark mahogany bar, slatted timber ceiling and, brass-trimmed furniture that together evoke a “boat cabin” aesthetic.
The cocktail program at The Sea is highlighted by a concise list of ten signature cocktails that showcase the advanced mixology techniques that have received acclaim at The Old Man. Innovative mixology processes are based on culinary techniques such as fermentation, sous-vide cooking, and rotary evaporation. Signature cocktails created by Head Bartender/co-founder Agung Prabowo are based on simple flavor combinations, while contemporary health-forward influences are informed within the sugar-free and lightly alcoholic drinks. Identified by numbers instead of names the signature drinks are epitomized by Cocktail #1 – inflected with the Heminway ethos and created with seaweed gin and lacto-fermented pineapple rind soda.
The Sea by The Old Man opens Monday to Saturday from 5 pm until midnight.
