Evoking Ginza’s famed izakayas – The Aubrey offers 3 distinct bar experiences & izakaya cuisine

After a complete makeover of the spectacular 25th-floor dining and bar space atop the iconic Mandarin Oriental Hong Kong, a new concept inspired by the izakayas of Tokyo’s upscale Ginza district has recently opened. A collaboration between leading restaurant group Maximal Concepts (behind renowned restaurants such as Mott 32, Limewood, and Sip Song – among many others) and Mandarin Oriental Hong Kong (flagship hotel of the luxury hotel group) – the newly opened The Aubrey offers hotel guests and local residents elevated dining and drinks experiences. With three bars set within a series of themed dining rooms – guests can enjoy both high-quality Japanese cuisine and a polished bar program highlighted by chess-inspired signature cocktails, sake, and an impressive collection of rare and vintage whiskeys.
Heading up the bar program at The Aubrey, highly regarded bar professional Devender Seghal – most recently bar manager at the famed Otto e Mezzo Bombana restaurant – oversees a drinks service at the Main Bar that includes a concise selection of chess-themed signature cocktails; a selection of Highballs & Chuhai cocktails, plus seasonal specialties. At the Omakase Cocktail Bar (reservation only) guests are introduced to Japanese spirits and flavours, while at the Champagne & Sake Bar – highlights include oysters and champagne – and sparkling sakes. The Aubrey has also compiled a spectacular whiskey collection, containing around 120 labels of rare and vintage whiskeys from around the world.
The Aubrey serves lunch and dinner daily, with bar service daily from 12:00pm until midnight (2 am closing Thursday – Saturday).
