New Volume Two menu features cocktails inspired by a narrative of 1960s pop culture & vintage spirits

Launched in 2021 as part of a refurbishment at The Ritz-Cartlon Millenia Singapore, Republic was created as a new multi-dimensional concept comprising Lounge and Bar spaces designed to evoke an elegant private residence. At Republic Bar, the concept is themed around the cultural and social dynamics of the 1960s – with decorative artwork – with an opening cocktail program that referenced historical anecdotes including Singapore’s transition to a republic, and other period events from the UK, USA, and Italy – complemented by a selection of cocktails crafted from 1960’s vintage spirits.
Within its first year of operation, Republic Bar has garnered international recognition with listings at No.12 on Asia’s @50bestbars 2022 and at No.90 on World’s Best Bars 2022.
Following up on its opening Volume One cocktail menu, Republic has recently launched its new Volume Two cocktail menu comprising 16 new cocktails drawing inspiration from the influential hallmarks of pop culture in the 1960s. The themes of art, cinema, fashion, and music were chosen as the inspiration behind the new cocktails that celebrate beginnings, innovation, hits, and legends.
Using limited edition spirits from the 1960s, Republic has expanded its vintage cocktails menu selection to eight. Guests can now relish a taste of Queen Elizabeth II’s favourite drink – the Queen’s Dubonnet Cocktail, made with 1960s James Burrough Beefeater London dry gin and 1960s Dubonnet; or the El Presidente which is a concoction of 1960s Ron Cumarey Blanco white rum, vintage Martini Rossi dry vermouth, Cointreau and Grenadine.
Republic Bar opens daily from midday – serving light bites all day plus a la carte lunch and dinner menus, afternoon tea, with cocktails available from 5:30 pm until late.
