Watermark is a modern restaurant occupying probably one of the most coveted harbour-front locations in Hong Kong. Located at the very end section of the Central Star Ferry terminal, the main dining room, with full height glass walls on three sides, boasts the most superb and “up close” panoramic views of the entire expanse of Victoria Harbour and the Kowloon side of Hong Kong. The restaurant, under the guidance of Executive Chef Pascal Breant, serves a contemporary European cuisine, specialising in fresh seafood, and dry-aged beef dishes. First opened in November 2007, Watermark has enjoyed acclaim for both its fine culinary offerings and the stunning setting, and is popular with both visitors, and Hong Kong residents alike. With a large open-plan dining room, plus a more intimate mezzanine-level private space, Watermark offers an attractive venue for special occasion dinners, private parties, and corporate events. When weather permits, the sliding glass panels on all sides can be opened up, creating a true seafront environment, with the fresh sea breezes, coupled with the serenity of the maritime sounds from the passing vessels on the harbour. The frequent transits of the iconic Star ferries can be followed as they berth directly below the restaurant.
The upper level space of the Star Ferry teminal building occupied by Watermark has a bright spaciousness with a lofty 10 metre plus ceiling, and floor to ceiling high glass panels on three sides. An open timber decking area surrounds the dining room and shades the interior from direct sunlight. Large translucent panels in the ceiling suffuse the dining room with light during the day, and at night the colorful lights of the Kowloon skyline provide a dramatic backdrop to the ink-black harbour waters. The interior design has a sleek, somewhat minimalist, modernity, utilising a predominance of glass, marble and teak materials. The spacious main dining room features an open-plan table arrangement- with unobstructed harbour views from all tables. A curving staircase leads to a partial mezzanine area that holds both the restaurant’s wine collection, and a private dining space for 24 persons. An outdoor lounge area is adjacent to the bar and is an appealing option for pre, or post-dinner drinks. The convenient location has easy access to both the MTR subway network (direct overhead walkway access to the Central station) , and of course the cross-harbour Star ferries operate from the berths directly below Watermark.

The Beverage Menu at Watermark offers a large selection of cocktails, plus the usual premium spirits, aperitifs, liqueurs and beers. The wine list has selections of red and white wines- all suitable for pairing with the various dishes- and at very reasonable prices. Proseccos and NV champagnes are also featured. The cocktails are categorised into Classic Martinis; Pier Cocktails; Classic Cocktails; and Champagne Cocktails. Additionally, a range of refreshing Mocktails, offer a non-alcoholic alternative.

Executive Chef Pascal Breant refreshed the Watermark menu in the second half of 2011, adding new creations to provide guests with a memorable gastronomic experience. New appetizer highlights include the Barrumundi Carpaccio; Crispy Jumbo Lump Crab cake; and Tartar of Prime Angus Tenderloin. Other appetizers include selections of fresh Oysters, and Seafood Platters ( for sharing). For the main dishes, Watermark’s “Steak Showcase” features their signature dry-aged beef – with six different prime cuts imported from USA, France, Poland and Ireland. Seafood main course specialties include Jumbo Scallop with Tenshi Prawn, Coriander Pinto Beans and Roasted Capsicum; and Pan-fried Sea Bass with Bulgur Wheat, Mushroom Fricassee and Celery Cream. Several pasta dishes include vegetarian and seafood varieties.
