Peruvian cuisine & pisco-forward cocktails on rooftop of refurbished The Club boutique hotel

Nestled on the fourth-floor rooftop of the recently relaunched (August 2015) The Club luxury boutique hotel, Tiger’s Milk is an inviting Peruvian-inspired bar and restaurant where Latin American cocktails and contemporary Peruvian cuisine are served in a characterful and vibrant atmosphere, conveniently located on the edge of Singapore’s central business district. Taking its name from the quintessential Peruvian culinary ingredient – Leche de Tigre – the rooftop bar occupies the entire rooftop space of the restored 19th Century heritage building – and offers engaging vistas across the historic shophouses of Ann Siang Hill and beyond to the CBD. Decor references to Peruvian culture include colourful textiles and patterned tiling that contrast attractively with the colonial era vibe of the neighbourhood.
Design Set on the compact rooftop space, Tiger’s Milk is accessed by elevator or stairs from the ground floor reception. At the rooftop, a cozy indoor section comprises a large U-shaped tiled bar with both bar counter and several high table seating. Outside, open-air terraces extend around three sides of the rooftop space, with a variety of comfortable table settings (under large extendable awnings in the case of inclement weather) exuding a stylish yet laid-back atmosphere.
Cuisine Experienced in both Japanese and Peruvian cuisines, Chef Hajime Kasuga has assembled an appetizing menu of his renditions of traditional Peruvian dishes. Contemporary cooking techniques and presentation, together with authentic ingredients, showcase the diverse mix of culinary influences found in Peruvian cuisine – including indigenous Peruvian, Latin, Japanese, and Chinese. Popular sharing dishes include selections of para pichar – small plates; ceviche – fresh raw fish marinated in citrus juice (leche de tigre); and the street-food inspired anticuchos of grilled meats, seafood and vegetables.
Cocktails A distinctive Peruvian character is reflected in the pisco-forward list of signature drinks, elevated with the inclusion of local culinary ingredients and house-made fragrant infusions. Signature cocktails like the Pisco Sour and Pisco Verde are complemented on the extensive drinks list with selections of Latin Amercian spirits such as cachaca, mezcal, rum and tequila, pisco-based interpretations of classic cocktails, plus a concise list of wines, whiskies and beers.
Tiger’s Milk opens Mondays to Saturdays from 5 pm – staying open until 1 am on Monday to Thursday, and 2 am on Friday and Saturday (closed on Sundays). Check on The Club Facebook Page for menu promotions and upcoming events. Table reservations and private groups are welcomed.
