Celebrated Hong Kong Cantonese restaurant has opened an offshoot at Marina Bay Sands

One of Hong Kong’s iconic luxury Chinese restaurants – the multi-awarded Mott 32 opened its Singapore offshoot late in 2019. A partnership between acclaimed high-end Hong Kong restaurant group Maximal Concepts and Marina Bay Sands, Mott 32 in Singapore is located among the impressive assemblage of world-class, chef-led restaurants within The Shoppes at Marina Bay Sands. In addition to the new Singapore opening, Mott 32 restaurants can also be found in Vancouver, Las Vegas – and with a Bangkok opening scheduled in 2020.
The Singapore restaurant closely follows the Hong Kong flagship restaurant’s masterful melding of an industrial New York aesthetic with classical Chinese decor. Exuding a sleek elegance and unpretentious luxury, all Mott 32 interiors have been created by internationally celebrated Hong Kong design group Joyce Wang Studio. For the Singapore iteration of Mott 32 local botanical elements are also referenced in the decor – adding subtle but familiar reminders of its tropical city location.
Mott 32 executive chef Lee Man-Sing has created his signature innovative cuisine by combining contemporary international cooking techniques with traditional Chinese recipes – focusing on Cantonese dishes – complemented with some Beijing and Szechuan influences. Signature dishes on the menu that are emblematic of chef Lee’s cuisine at Mott 32 included the Applewood Roasted Peking Duck; Smoked Black Cod; and Barbecue Pluma Iberico Pork Glazed with Yellow Mountain Honey.
A polished wine and cocktail program offers signature cocktails designed to complement the dishes – utilizing Asian spirits and culinary ingredients including Osmanthus honey, infusions with Ginseng roots, goji berries, pomelo, air-dried tangerine peel, shiso leaves, star anise, and cardamom.
Mott 32 opens daily serving lunch and dinner menus, while the bar is open continually from 11:30 am to midnight.
