Contemporary Vietnamese cuisine matched with bespoke craft cocktails at new Saigon bar

A recent addition to the vibrant Saigon cocktail scene, The Triệu Institute opened in late 2022 by the team behind the leading Saigon gin distillery Lady Trieu Gin. Coinciding with the launch of Lady Triệu Contemporary Vietnam Gin, The Triệu Institute deftly combines contemporary Vietnamese cuisine, with bespoke craft cocktails. Dishes and drinks on the creative menus focus on utilizing the finest local ingredients to showcase the diverse regional flavors of Vietnam and Lady Triệu Gin.
Occupying a vintage 2-story building in the vibrant Mac Thi Buoi nightlife neighborhood of District 1, The Triệu Institute features a street-level dining space with an open kitchen and dining counter, plus a large communal shared dining table. Upstairs, the long bar counter and impressive back bar dominate the space – with additional tables with sofa seating, plus an open-air outdoor terrace.
Highlights from the drinks list include a Lady Triệu Gin tasting flight and signature G&T’s – combining the varieties of Lady Trieu Gins with house-made tonic infusions. In addition to the flagship Lady Trieu Contemporary Vietnam Gin – the Lady Trieu Distillery have also created the Lab Series – with four varieties based on regional ingredients and flavors- Dalat Flowerbomb Gin; Hoi An Spice Road Gin; Sapa Citrus Tea Gin; and Mekong Delta Dry Gin.
Cocktail highlights include the Blood & Tears – a colorful combination of Contemporary Vietnam Gin, Raspberry & Pickled Hibiscus, and Pepper Syrup; Reverse Clover Club – with Dalat Flowerbomb Gin, Raspberry Foam, Lime, and Raspberry Candy; and the Nha Trung Margarita – Jose Cuervo Tequila Tradicional, Passionfruit, Cointreau, Lemongrass, and Hibiscus Salt. Additionally, the bar also serves a comprehensive list of classic cocktails, whiskies, wine, and liqueurs.
At the ground-level kitchen and restaurant, Head Chef Toàn Thanh, in collaboration with International Executive Chef Chris Donnellan has created his interpretation of modern Vietnamese cuisine – highlighted by a five-course Tasting Menu that features dishes paired with cocktails based on the Lady Triệu Gin varieties. Featured dishes include Oysters; Grilled Octopus; Black Angus Rump Steak; Chargrilled Dry Aged Chestnut Pork Chop; and Strawberries and Bruleed Mango.
The Triệu Institute serves a seasonal set lunch menu from 11:30 am Monday to Friday, with dinner served daily from 5:00 pm. And between 5:00 pm and 8:00 pm the daily Happy Hour promotion is a popular attraction.
